Curd Rice

Curd Rice, also known as yogurt rice, is a very famous south Indian dish. Its very healthy and very easy to make. Its as simple as mixing curd and rice. But there are many variations to this basic recipe. The way I like it is with little crunch, so this is how I roll :) Ingredients: rice : 1 cup water: 3 cup curd : 2 cup cucumber : 2 medium sized (diced) peanuts : 1/4 cup (fried) curry leaves : 8-10 mustard seeds: 1tsp green chilli : 2-3 Slit in the middle. channa dal : 1 tsp salt: to taste sugar: 1 pinch Procedure: Generally when we cook rice the measurement is 1 cup rice and 2 cup water, but for curd rice we need the rice to be over cooked so we would use 3 cup of water for 1 cup of rice. What we want is the rice to be mushy. Remove the rice into a bowl and give it a nice steer, as the rice is overcooked it would mash up a little. Now add curd and mix it. Methi Gobi (Cauliflower with kasturi methi)

Cauliflower is one of those vegetables which even those kids love to eat who don't like to eat vegetable and create a lot of fuss about it. If you goggle cauliflower it will tell you that its a annual vegetable and staying in the USA I do believe this fact, but in India its mostly available in winter. So as a kid, cauliflower was one more reason why winter has always been my favorite season :) There are hundreds of ways to cook this awesome vegetable. Today we would prepare something thats just very simple. Ingredients : Cauliflower : broken into small florets Potatoes : 1 small cut into cubes Onion : 1 small thinly sliced Green chillies : 1-2 Salt : as per taste Pancha Poran : 1 tsp Turmeric Powder: 1 tsp Kasturi Methi : 1 tbsp Oil : 2 tbsp Coriander Leaves : chopped 1 tsp Procedure: In a pan add the oil. Kheer

Kheer is a traditional South Asian, sweet dish made by boiling rice in milk and sugar and garnished with cashew , almond, pistachio, saffron, cardamon. Kheer is a 2000 year old recipe and originated in Lord Jagannath Temple, Puri, Orissa. Since then it has gone through a lot of variations. Its also my all the favorite sweet dish. Ingredients : Rice : 1/4 cup Milk : 4 cups: Ghee: 2-TBSP Suar: 1/4 cup Salt : 1 pinch Saffron: few strands Cardamon : Freshly crushed 2-4 Dry fruits: hand full(Cashew, Almond, Pistachio, Raisin). Procedure : In a heavy bottom pan heat half of the ghee make sure not to burn it :) Add washed rice to it and fry till almost transparent. Add the 4 cups of milk and steer. keep stirring constantly as the milk has the tendency to stick. Once the milk comes to a boil add sugar, saffron, a pinch of salt and crushed cardamon to it,reduce the heat and keep cooking for another 30 mins. While the rice

Pani Santula (Orissa style mixed vegetable)

From the day I remember Santula has been made as part of dinner at my home. What ever may be the occasion, my dad always prefers to have santula with chapati for dinner. What is santula you ask... It is a dish made with different vegetables with minimum spices. There are mainly two types of santula : fried and boiled. As a kid I used to hate it, quite obvious it has so many vegetables in it :) Both I and my brother would struggle to finish our plates as there was no option off taking away without finishing our portions .... phewwwwwww As I grew up and moved to hostel and had to survive on that not so yummy and of course neither very healthy hostel food which my friends would literally force down my throat, I realized how yummy santula was. So every time I would go home for vacation, I would insist on eating santula :) Any ways enough of back story, lets get on to what I have here for you guys : Pani Santual. Omelet Quesadilla

Quesadilla is a Mexican food primarily made of cheese inside a folded wheat or corn tortilla cooked until the cheese melts. Occasionally other ingredients are added with the cheese, such as chicken, beef, tomatoes, onions, peppers, mushrooms, olives, and seafood, to add variety to the dish. Even though I like Mexican food, unlike my friend Shanta am not a big fan of tortilla. I know its weird but thats how it is :) So I decided to use omelet in place of tortilla and called it omelet quesadilla. So this is what we need : Eggs : 3 Milk : 1 tsp Potato : 1 small diced into cubes Tomato : 1 small diced Mushroom : 1/4 cup , sliced Broccoli : 1/4 cup chopped finely Spring onion : 2-3 tbps. Spinach: handful Onion: 1/4 cup diced Green Chili : 1 (if you want it to be spicy) Cheese : Grated 2 - 3 Tbsp Salt to taste Pepper powder : to taste Oil : 1 tps Lets make this yummy brunch In a pan add some oil.
