Pani Santula (Orissa style mixed vegetable)

From the day I remember Santula has been made as part of dinner at my home. What ever may be the occasion, my dad always prefers to have santula with chapati for dinner.

What is santula you ask... It is a dish made with different vegetables with minimum spices. There are mainly two types of santula : fried and boiled.

As a kid I used to hate it, quite obvious it has so many vegetables in it :)
Both I and my brother would struggle to finish our plates as there was no option off taking away without finishing our portions .... phewwwwwww

As I grew up and moved to hostel and had to survive on that not so yummy and of course neither very healthy hostel food which my friends would literally force down my throat, I realized how yummy santula was.

So every time I would go home for vacation, I would insist on eating santula :)

Any ways enough of back story, lets get on to what I have here for you guys : Pani Santual.

Its the boiled variation of santula, very yummy and very healthy.

Ingredients :
  1. Potatoes : 2 cut into small pieces
  2. Egg plant: 1 cut into a little larger size than the potatoes
  3. Pumpkin: 1/2 cup cut into small pieces like the potatoes
  4. Radish: 2 cut into small pieces like the potatoes
  5. Carrot: 1 cut into small pieces
  6. Green Peas : 1/2 cup (frozen or fresh)
  7. Cauliflower: 2-3 florets cut into a little larger size than the potatoes
  8. Tomatoes - 1 cut into small pieces
  9. Few Beans cut into small piece
  10. Panch phutana: 2 tsp (Its a mix of few five spice seeds: Fenugreek, Fennel Seed, Cumin seed and Radhuni)
  11. 1 tea spoon of Oil - essential
  12. Garlic: 4-5 cloves crushed
  13. Onion: 1 small, sliced thinly
  14. Turmeric powder : 1tsp
  15. Green chili: 1-2 Chopped
  16. Salt to taste
  17. Coriander leaves : chopped 1-2 tbsp
Procedure:

In a pot boil all the vegetables together except the tomato and onion, with small amount of water and turmerc powder.
When the vegetables are almost cooked add the tomato.
In another pan heat some oil. Once the oil is hot add the panch phutana and let it splutter.
When the panch phutana is don add the cursed garlic,green chillies and onion. Cook it for few minutes and add this to the boiling pot of vegetables, mix it gently and cook for another minute or two.

Turn off the heat and garnish with some chopped coriander leaves .


What can be possibly easier than this. Its a quick, yummy and healthy dish you can eat with roti, paratha even with rice :)

You can always add few more vegetables like drum sticks, okra, papaya. Jut remember if you are using okra add it at the end with tomato :)

Try this out at least once a week or so to get a healthy serving of vegetables.
