I am back after a really long time. Have been really busy organizing my life around home, kid and new job. Yes thats right I am a working lady now :) So here is my latest recipe. Ingredients: Egg: 8 (hard boiled)  Bay Leaf: 1  Dry Whole Red Chilli : 2  Green Cardamom: 2  Clove: 2  Cinnamon: 1”  Onion – 1 cup Finely Chopped Onion Paste: 2 Tbsps  Ginger Paste: 1 ½ tsps  Garlic Paste: 1 tsp  Tomato Puree: 2 Tbsps  Yogurt: 4 – 5 Tbsps  Turmeric Powder: 1 tsp  Red Chillie Powder: ¾ tsp  Garam Masala Powder: ½ tsp  Fresh Cream: 2 tsps  Oil: ¼ cup  Ghee: 2 tsps  Green Chilies: 2 – 3  Sugar – 1 tsp To taste Salt Procedure: Heat white oil 2 Tbsp and fry the eggs to a golden brown colour. Anda Palak

Egg and Palak is a combination that is not only healthy but also delicious. Here is a version that will help spice addicts like me and Tanmaya. Ingredients: Egg: 4 Boiled Spinach: 4 cups Potato: 1 cut into cubes Onion:1 large thinly sliced Tomato: 1 medium finely chopped Ginger garlic paste: 2 tbsp Cumin Powder: 1 tbsp Coriander Powder: 1tbsp Turmeric Powder: 1 tsp Red Chilli Powder: 1 tbsp Salt: as per taste Cardamom: 2 Cinnamon: 1/2 inch stick Bay Leaf: 1 Garam Masala Powder: 1 tsp Oil: 2 tbsp Coriander leaves: 1/2 cup and little for garnish Procedure: In a pan heat oil.  Add the potato cubes and fry till they are slightly golden. Egg Masala Rice

Egg and rice is  a great combination, at least from my point of view. So the other day for dinner I wanted to make something that was easy and quick and didnot need me to do a lot of chopping and cutting. So I decided to go with a egg fired rice but with a twist and it ended up with this recipe and its good :) Ingredients: Eggs - 4 Rice- 2 cup cooked Onion- 1 large finely chopped Tomato - 2 chopped Green chilly- 2 Turmeric pwd- ¼ tsp Red chilly pwd- 1 tbsp Ginger garlic paste- 1 tbsp Mint Leaves: 2 tbsp chopped Biryani Masala: 1 tsp Oil - 3 tbsp Garam masala pwd- ½ tbsp Coriander leaves - handful Salt to taste Procedure: Beat the eggs with a pinch of salt. Egg Fried Rice with Peas

Egg fried rice was my Mom's go to lunch box item. Its quick and easy to make and honestly me and my brother loved it. You can make it with fresh cooked rice or with left over rice. Ingredients: Long Grain Rice:1/2 cup Cooked  Eggs: 2 beaten Vegetable Oil: 2 tbsp Garlic: 2 cloves crushed Onion: 1 small chopped Peas: 1/4 cup  Soy Sauce: 1 tbsp Salt: 1 pinch Spring Onions: for garnish Procedure: Heat 1 tbsp of oil in a wok. When the oil is hot add the beaten eggs into the wok and cook over a low heat, stirring constantly, until softly scrambled. Remove the eggs from the heat and set aside. Heat the wok over a medium heat. Add rest of the oil and swirl it around to coat the sides of the wok. When the oil is hot, add the garlic, onion and peas and sauté, stirring occasionally, for 1-2 minutes. The glorious season of picnics, BBQs and sundresses has finally arrived and everybody is either busy planning activities to keep their kids busy during the summer vacation or planning pool and BBQ parties with friends and family. Every time I plan a party the first thing I do is prepare a nice menu that would have some items that can be prepared in advanced so that I don't look like a cafeteria lady rather than looking like the glamorous host ;) Deviled eggs is real great fit into the list. You can prepare them fresh or  prepare them ahead of time and these can be refrigerated up to 24 hours. Garnish just before serving.  So here is my first recipe for this summer. Spanish Omelette

The Spanish omelette is a typically Spanish dish consisting of a thick egg omelette made with potatoes and fried in olive oil. There are so many variations even in one specific region but the most common is the one made with eggs, potatoes and onion. Ingredients: Eggs: 5 whole Garlic: 2-3 cloves minced Onion: 1 large chopped Potato: 1 large cubed Milk: 1/2 cup Salt: as per taste Pepper: as per taste Cheese:Mixed shredded 1/2 cup Olive Oil: 2 tbsp Procedure: Preheat the oven to 350F. In a skillet heat oil and minced garlic and onion to it. Cook onions and garlic  on medium heat 5 min., stirring frequently.  Add potatoes, cook for 5 min., stirring frequently. Remove from heat.  Coat a oven safe baking dish with little non-stick spray. Spread potato mixture to evenly cover bottom of skillet. Anda Tarkari (Egg Curry)

As promised here I am with the recipe for egg curry or as we say anda aloo jhola. Ingredients: Eggs: 4 boiled Potato: 1 large cut into 4-6 pieces Tomato: 1 medium finely chopped Onion: 1 medium finely chopped Ginger Garlic paste: 2 tbsp Red Chilli Powder: 1 tbsp Turmeric Powder: 1 tbsp Cumin Powder: 1/2 tbsp Coriander Powder: 1 tbsp Cinnamon Stick: 1/2 inch Whole cardamon : 4 Salt: as per taste Sugar: a pinch Bay Leaf:1 Oil: 3 tsp Procedure: In a pan heat 1 tsp of oil. Fry the potato chunks till slightly golden all sides. Peel the boiled eggs and sprinkle a pinch of turmeric powder on them, mix well and fry in the same pan as potatoes till slightly golden all over. Remove form heat at keep aside. In a deep kadhai or pan heat rest of the oil and add a pinch of sugar. There is nothing more continent and easy to make than a quick egg masala. I always have boiled eggs in the freeze as Tanmaya prefers sliced eggs in his salad for lunch and it always comes handy in case we need a quick snack or stir in a quick dish. So here is my take on egg masala. Ingredients Eggs - 5 Boiled Onion - 2.5, medium-sized thinly sliced Tomato - 1 medium finely chopped Ginger - 1 tbsp finely chopped Garlic - 1 tbsp finely chopped Green chillies - 4 slit Turmeric powder - 1/4 tsp Chilly powder -  2 tsp Coriander powder – 1 tsp Pepper powder - 1/4 tsp Garam masala powder – 1/2  tsp Curry leaves - 1 sprig Mustard seeds - 1/2 tsp Salt - To taste Oil – 1.5 - 2 tbsp Cilantro - 2 tbsp chopped, to garnish (Optional) Procedure Rinse the freshly boiled eggs under cold running water and remove their shells. Egg Grilled Cheese Sandwich

Grilled cheese sandwich is soothing everybody enjoys starting from kids to adults.  So here is my take on grilled cheese with egg. Ingredients: Whole Egg: 3 Bread slices: 4 Choose bread of your choice Tomato: 4 slices Lettuce: 2 leaves Cheese Slice: 2 Salt as per taste Pepper as per taste Oil 2 tsp Procedure: In a bowl bit 2 eggs with salt and pepper to taste. Heat 1 tsp of oil in a pan and make a simple omelet. Divide the omelet into half. To the bread slice apply a thin layer of butter/spread. Place one lettuce leaf top it up with 2 tomato slices, one half of the omelet and one slice of cheese and finally another slice of bread. In a bowl beat the last egg with slight salt and pepper. Heat rest of the oil in the pan. Now its time to get your hands dirty ;) Dip the sandwich in the beaten egg and place it on the pan. Let it turn golden on one side and turn it over. Egg Bhurji Curry

As a kid this used to be one of my favorite curries that my mom would make for breakfast with roti or parathas. Its easy, quick and on top of all yummy!!! Ingredients: Egg: 4 whole Onion: 1 medium finely chopped Green Chilli: 4 finely chopped (remove the seeds if you don't want it to be too spicy) Tomato: 1 medium finely chopped Green Peas: 1/2 cup Red Chilli Powder: 1 tsp Turmeric Powder: 1/2 tsp Salt: as per taste Mutton/chicken curry masala: 1 tsp Oil: 2 tsp Procedure: In a pan heat 1 tsp of oil and 1/2 of the chopped green chilli and onion with a pinch of salt. Fry till the onion turns transparent. In the mean while beat the eggs with 1/4 tsp of red chilli powder and 1/2 tsp salt. Add the beaten eggs to the pan and make scrambled eggs. As I mentioned in my previous blog there are so many different ways to make omelet here is one more version that has a very Indian touch to omelet. I learned it when I was staying with my friends during my early job days. Ingredients: Whole Egg: 2 Onion: 1 small finely chopped Tomato: 1 small finely chopped Green Chili: 2 finely chopped Salt: as per taste Red chili powder: as per taste Mutton/Chicken Masala Powder: 1/2 tsp Coriander Leaves : finely chopped 1/2 tsp Oil: 2 tsp Procedure: In a pan heat 1 tsp of oil add green chili, onion and tomato with salt to taste. Cover and cook  till the tomatoes are mushy. Add the red chili powder, Mutton/Chicken Masala Powder and coriander leaves and cook for 2 mins stirring occasionally. Egg is such a versatile ingredient. Boil it, fry it, pouch it or mix it with something else to make something really delicious. As a kid me and my brother were bribed by my Dad with kiss-me bar chocolates during our exams. I guess it was my Dad's way of making us forget about the exam jitters and rather be excited about it. As we grew the kiss-me bar chocolates were replaced with different kind of favors, for my brother they used to be new pens, bubble gums and for me it used to be street food mostly samosa, vegetables cutlets or egg pakoda.  Till date if I have an exam or interview to attend I try to treat my self with something or other. The only drawback now-a-days is I have to prepare it myself rather than dad getting it in paper packs. Egg Paratha is a famous street food in Northen India and to be even more specific Delhi & Noida. I first tasted it during late night dine outs with my office colleagues. First I was superised, how did the guy managed to stuff raw egg onto a paratha, then I went and stood next to him to see the whole thing live. Since then I have been preparing this recipe and its real quick and yummy. Egg Puff!!!! who doesn't  love these. Be it in college canteen or at street stalls outside office, I have always loved these. These are easy to make and yummy to eat. When I was in Bangalore, coming back from office I would always pick some snack for me and my dear roommates and we would enjoy it together. Sometimes it would be samosas, bhaji and sometimes it would be puffs. Depending on the day of the week it would be either egg or vegetarian.  Today I would be sharing the easy recipe of egg puffs. Quesadilla is a Mexican food primarily made of cheese inside a folded wheat or corn tortilla cooked until the cheese melts. Occasionally other ingredients are added with the cheese, such as chicken, beef, tomatoes, onions, peppers, mushrooms, olives, and seafood, to add variety to the dish. Even though I like Mexican food, unlike my friend Shanta am not a big fan of tortilla. I know its weird but thats how it is :) So I decided to use omelet in place of tortilla and called it omelet quesadilla. Eggs are a great source of protein and choline. Popular choices for egg consumption are chicken, duck, roe and caviar. The egg most often humanly consumed by far is the produce of the chicken :) It supplies all essential amino acid for humans and provides a variety of vitamins & minerals. This is a general concept that eating egg yolk adds to your cholesterol , so does a lot of stuff. But most of dietitians say one should eat 1 egg every day which has a lot less calories compared to a bagel or a waffle. The argument regarding what is good and bad is never ending so lets move on and see how we can have eggs with loads of protein and almost no spices.
