Fish Cutlet

Being from the coastal state of Orissa I am very fond of fish. I prefer fish over any other type of non-veg any time :)

There are hundreds of varieties of fish available and even more ways to prepare them. The same fish can be cooked as a simple curry or can be grilled , can also be made into a sushi , it really depends on how you relish it.

Fish cutlet is one of the most delicious and easy Indian recipe for fish. The fish we want to use for this recipe really depends on what we have available but preferably one with fewer bones so that it is easy to clean. I used Tilapia fillet that I bought form Costco. That made my job even easier as it was filled nicely without any bones.

You can always use what you have in the kitchen, just make sure that you remove all the bones so that it doesn't get stuck while eating.

Ingredients:

  1. 1/2 Kg of any fish(preferably steak or fillet)
  2. 1 Cup of water
  3. 4 Cloves of garlic
  4. 1 inch piece of ginger
  5. a few peppercorns
  6. a teaspoon of fennel seeds
  7. 4 Boiled potatoes (peeled and mashed)
  8. 2 Onions (very finely chopped)
  9. 4-5 fresh green chilies (very finely chopped)
  10. 1 bunch of fresh Coriander leaves (very finely chopped)
  11. 1 Tbsp of finely chopped ginger
  12. 1 Tbsp of finely chopped garlic
  13. 1 Tbsp of lime juice
  14. 1 Tsp red chili powder (to taste)
  15. 3 Tsp Coriander powder
  16. 1 Tsp of roasted cumin powder
  17. 1/2 Tsp garam masala powder
  18. Salt to taste
  19. One lightly beaten egg, with a pinch of salt added to it
  20. bread crumbs
  21. Oil for deep frying
Wow its a long list !!!!!

Lets get cooking.

Procedure:

  • Boil the fish in water along with crushed ginger, garlic, black pepper and funnel seeds. It will take 4-5 mins for the fish to be cooked.
  • Let it cool down all absorb all the yummy flavor.
  • After few minutes drain the water and remove all the skin and bones if any and mash it along with the boiled potatoes.
  • Mix all the ingredients except bread crumbs, oil and egg.
  • Make a nice doug and taste for salt and spices.
  • Make cutlets out of the dough. You can make it in any size and shape your heart desires. I made it oval. Simply take a little mixture and shape it in the form of a ball. Then gently press it between your palms to make it flat.

  • In a bowl beat the egg with little salt and pepper.
  • Now pick each fish cutlet and first dip in egg and roll it in the bread crumbs. Place on a flat tray. Once all the coating is done, it is essential that the coating gets stuck nicely.
  • To make sure that our cutlet don't break while frying place it in the refrigerator for 30 mins.
  • For frying heat oil drop one cutlet first to make sure that it doesn't break not that it will but just in case.
  • Don't start turning immediately, wait for few sometime then turn. Once its turns golden brown its ready.
  • Fry rest of the cutlets similarly.
This is for sure time consuming but its worth it. Just make sure to avoid excess moisture of any kind so that the cutlets don't break.

It can be served as a delicious starter or just a tea time snack what ever suits your schedule :)
