Goat Mutton Curry

Mutton is meat of goat. It is the most widely consumed meat in the world, a staple of, among others, Mexican, Indian, Greek and southern Italian cuisines.

Lamb (and mutton), a red meat, has always gotten a bad rap for many reasons. One reason is that it is often believed that white meat is healthier. But it is a great source of absorbed zinc & iron. Lamb is rich in B vitamins, especially B12. One serving can provide 74-100% of the daily requirement for Vitamin B12, which is essential for the body's metabolic reactions.

So here is how we roll in beautiful state of Orissa....
Ingredients:
  1. Mutton : 2kg (serves 8-10 people)
  2. Potato : 2 large cut into 4 pieces
  3. Onion: 3 large chopped
  4. Ginger : 2 inch
  5. Garlic: 2 large
  6. Red Chili: 4-5
  7. Tomato : 2 medium
  8. Cumin Powder : 2 tbsp
  9. Coriander Powder : 2 tbsp
  10. Turmeric Powder : 4 tbsp
  11. Chili Powder : 2 tbsp (more or less depending on how spicy you like)
  12. Salt : to taste
  13. Sugar : 1 tbsp
  14. Dry Bay Leave : 1
  15. Oil for cooking.
  16. Whole Cardamon : 4
  17. Whole Cinnamon : 1 inch
Process:

Wash and clean the mutton nicely and drain all the water properly.
Add 1 tbsp salt, 2 tbsp turmeric and 2 tbsp oil to the meat, mix properly and let it sit for 30-45 mins. In the meanwhile lets prepare the masala.
Grind the ginger, garlic, half of the onion and whole red chillies with little water into a smooth paste.
In a deep pan heat 2-3 tbsp oil.
Add a bay leave and sugar to the hot oil.
As the sugar finishes caramelizing add the rest of the chopped onion to it and cook till transparent.
Add the red chilli powder and let it cook for 1-2 mins. Make sure the heat is not too high you might end up burning the whole thing.
Once the raw smell of the chili powder is removed add the ginger-garlic paste and cook for few mins and add coriander powder, cumin powder, turmeric, tomatoes and salt as per taste. Do remember that we have added salt to the meat so add less than what you would use normally so that we don't end up with a very salty curry.
Cover and cook for few more minutes.
Once the tomato is fully cooked , remove the cover and cook the masala stirring occasionally till oil oozes out. It would probably take 10-15 mins taking the amount of masala we are cooking here.
Now add the meat small amount at a time so that its easy to mix. Once all the meat is in the pot
mix properly so that every piece is nicely coated with the masala.
Continue cooking for another 10-15 mins stirring intermittently.
Add the potatoes to the pot and mix well, continue cooking for another 5-10 mins stirring intermittently.
Add 2 cup of water mix well and cook covered till the meat is tender(Can check by checking the meat).It might take 20-25 mins. If you are using a pressure cooker instead of a open pot wait till 2-3 whistles.
Once the meat is cooked properly let it simmer for few till you get the right consistency.
Turn off the heat and let it cool down before adding the crushed cinnamon and cardamon.
Serve it with plan white rice and a salad on the side. That should do it....


It really take a lot of time but for sure its all worth it. Prepare with all the patience and love it would turn out real amazing.
