Onion Masala Dosa

Dosa is a fermented crepe or pancake made from rice and black lentils batter. It is indigenous to and staple food in the southern Indian states. It is a common breakfast and street food.

There are so many variations used on the basic recipe of dosa like masala dosa, onion masala dosa, rava dosa, chilli paneer dosa, egg dosa, palak dosa and the list goes on and on.

Today I would give you the recipe for onion masala dosa. This is my ultimate favorite street food for breakfast ever. I remember when I was a kid, almost every sunday we would have masala dosa. 

Ingredients:

Dosa Shell
  1. Urad Dal : 1 cup
  2. Rice : 1 cup
  3. Channa Dal : 1/4 cup
  4. Salt: 1/2 tsp


Masala
  1. Potato : 1 large boiled
  2. Onion: 1 medium thinly sliced
  3. Green Chili: 1-2 
  4. Curry Leaves: few
  5. Mustard Seeds: 1/2 tsp
  6. Green Peas: 1/2 cup
  7. Carrot : 1 medium thinly sliced
  8. Coriander leaves : for garnish
  9. Salt for taste


Procedure:

For the batter soak the Urad Dal, Rice and channa dal over night.
Drain and grind into a smooth paste.
Add salt mix well and let the batter ferment for few hours.

For the masala heat 1 tsp oil in a pan. Add the mustard seed. Once the spluttering stops add the chopped green chili and curry leaves.

Add half of chopped onions a pinch of salt and cook till the onions are little transparent. Add this masala to the boiled and mashed potatoes. Add the green peas, salt as per taste and mix well.

In a tray arrange the potato mix, thinly chopped carrot, onion, and coriander leaves in a tray for easy access.


Now that all prep work is done lets get cooking.
Heat a pan or griddle and add a little oil. Spread 1/2 cup batter on pan in circular motion to make dosa.
The best thing about making dosa is, it lets you know when its done. 
When the dosa starts lifting from the sides without any help then its done. Reduce the heat add potato mix, top it up with carrots, onions and coriander leaves.
Sprinkle a little chat powder (optional).


Fold the dosa and remove from heat. 
Serve with piping hot sambar and peanut chutney.


I remember once me my brother and my dad were all set for our breakfast and mom started making dosas and you won't believe we got up after finishing 24 of them :)
