Chatu Besara (Mushroom in mustard gravy)
Besara is an authentic Oriya dish prepare with mustard paste. Cooking mushroom in mustard garcy is a very common dish prepared in many oriya households. Ingredients: Mushroom: 2 cups cut into half Potato: 1 medium cut in cubes Onion: 1 small sliced Tomato: 1 medium chopped Gren Chilli: 2 whole Red Chilli Powder: 1 tbsp Turmeric Powder: 1 tbsp Ambula(dried mango slices): 1 Mustard Seeds: 1 tsp Mustard Paste: 2tbsp ( grind, 2 tsp mustard seeds, 1 tsp cumin seeds and 5-6 cloves of garlic pod) Salt: as per taste Oil: 2 tbsp Coriander leaves: for garnish Procedure: In a pan heat 1/2 tbsp of oil. Add the mushroom and turmeric powder and stir fry till the mushrooms cook and turn brownish. Remove the mushroom and heat another 1/2 tbsp of oil and fry the potato cubes till they turn slightly golden and remove.
