Chatu Besara (Mushroom in mustard gravy)
Besara is an authentic Oriya dish prepare with mustard paste. Cooking mushroom in mustard garcy is a very common dish prepared in many oriya households.
Ingredients:
- Mushroom: 2 cups cut into half
- Potato: 1 medium cut in cubes
- Onion: 1 small sliced
- Tomato: 1 medium chopped
- Gren Chilli: 2 whole
- Red Chilli Powder: 1 tbsp
- Turmeric Powder: 1 tbsp
- Ambula(dried mango slices): 1
- Mustard Seeds: 1 tsp
- Mustard Paste: 2tbsp ( grind, 2 tsp mustard seeds, 1 tsp cumin seeds and 5-6 cloves of garlic pod)
- Salt: as per taste
- Oil: 2 tbsp
- Coriander leaves: for garnish
Procedure:
In a pan heat 1/2 tbsp of oil.
Add the mushroom and turmeric powder and stir fry till the mushrooms cook and turn brownish.
Remove the mushroom and heat another 1/2 tbsp of oil and fry the potato cubes till they turn slightly golden and remove.
In the same pan heat rest of the oil and add the mustard seeds and let it splutter.
Once the mustard seeds stop spluttering add the onions and fry till they turn transparent.
Add the red chilli powder and cook till the raw smell is gone.
Add the chopped tomato and cook for a minute.
Then add 1 cup of water and add the mustard paste, salt to taste, green chili and bring it to a boil.
Add the fried mushroom, potato and ambula to the gravy, cover the lid and cook till the potato is cooked through.
Remove the lid and cook till the gravy evaporates and you achieve the desired consistency.
Garnish with coriander leaves and serve it hot with rice and enjoy.
