Mirchi Bhaji

Mirchi Bahaji is a spicy Indian snack consisting of chili (Mirchi) and potato stuffing, served hot with tomato sauce or occasionally with mint and tamarind chutney. It is very filling for its size. The mirchi bhaji/bada of Jodhpur, Rajasthan is very famous. In southern part of India and the stuffing for Mirchi Bajji vary. Everybody prepares their filling as per their taste. So here is my take. Ingredients: Banana peppers: 4 Potatoes: 1 large Boiled Onion: 1 medium finely chopped Coriander leaves: 1/2 cup chopped Red Chilli Powder: 1 tsp Green Chilli: 2 finely Chopped(optional) Lime Juice: 1 tsp Chat masala : 2 tbsp Salt: as per taste For the batter: Besan: 1 cup Cornflour: 1 tsp Red chilli powder: 1 tsp water as required salt oil to deep fry Procedure: Clean the peppers, make a vertical slit on one side and remove the vein with the seeds. Roasted Cauliflower

The other day I was wondering what to cook for dinner and opening and closing the refrigerator just to figure out what to pick, when on the TV the food network chef prepared a whole 3 course meal on the grill. That gave me the idea to roast up some veggies and then cook them in a gravy or spices, that would be like vegetable kadhai but the only veggies I had that could use was cauliflower. So here is my roasted cauliflowers recipe. Ingredients: Cauliflower:1 large head broken into florets Oil: 4 tbsp Ginger: 1 inch peeled and minced Cumin Powder: 1 tsp  Green Chilis: 2 minced Coriander Powder: 2 tsp Turmeric Powder: 1/2 tsp Red Chilli Powder: 1/4 tsp Salt: as per taste Tomatoes : 1 large chopped Cilantro:  1/4 cup chopped Procedures Preheat the oven to 400°F.  Toss cauliflower florets with half of oil and some salt.  Spread on baking sheet.  Roast until caramelized and mostly tender, 15-20 minutes.  Heat remaining oil in a skillet until shimmering. 

Deviled Eggs

The glorious season of picnics, BBQs and sundresses has finally arrived and everybody is either busy planning activities to keep their kids busy during the summer vacation or planning pool and BBQ parties with friends and family. Every time I plan a party the first thing I do is prepare a nice menu that would have some items that can be prepared in advanced so that I don't look like a cafeteria lady rather than looking like the glamorous host ;) Deviled eggs is real great fit into the list. You can prepare them fresh or  prepare them ahead of time and these can be refrigerated up to 24 hours. Garnish just before serving.  So here is my first recipe for this summer.
