Egg Masala Rice


Egg and rice is  a great combination, at least from my point of view. So the other day for dinner I wanted to make something that was easy and quick and didnot need me to do a lot of chopping and cutting.
So I decided to go with a egg fired rice but with a twist and it ended up with this recipe and its good :)
Ingredients:

  1. Eggs - 4
  2. Rice- 2 cup cooked
  3. Onion- 1 large finely chopped
  4. Tomato - 2 chopped
  5. Green chilly- 2
  6. Turmeric pwd- ¼ tsp
  7. Red chilly pwd- 1 tbsp
  8. Ginger garlic paste- 1 tbsp
  9. Mint Leaves: 2 tbsp chopped
  10. Biryani Masala: 1 tsp
  11. Oil - 3 tbsp
  12. Garam masala pwd- ½ tbsp
  13. Coriander leaves - handful
  14. Salt to taste

Procedure:
Beat the eggs with a pinch of salt.
Heat oil in a fry pan, add onion, green chilly with a pinch of salt and let it cook till onions are translucent.
Add the chopped tomato and toss it, cover and cook.
Once the tomatoes are cooked, add turmeric pwd, red chilly pwd, ginger garlic paste, garam masala pwd and salt.
Cook till it turns to thick curry and oil separates.
Add the chopped mint leaves and mix well.
Add ¼ tb water  and allow to cook for 5 mins.
Add beaten egg, mix and allow to cook in low flame.
Gently stir it and continue cooking for some more mins.
Once the egg masala turns golden and fragrant, add this to the steamed white rice and biryani masala.
Mix gently. Serve hot with fresh chopped coriander sprinklings.
These go great with any raita.
