Mint Paratha

Mint mint every where don't know what to do with all of it. So tried mint pratha and I must say experiment successful.

Ingredients:

  1. Atta - 2 cups
  2. Cumin Powder: 1 tsp
  3. Coriander powder - 1 tsps
  4. Green Chillies - 2 finely chopped
  5. Ginger - about 1/2 tsp grated finely
  6. Turmeric powder - 1/2 tsp
  7. Red Chilli powder - 1 tsp
  8. Salt - to taste
  9. Boiled and grated potatoes - 1 big potato or 2 small ones
  10. Fresh mint - 1 big bunch chopped finely.
  11. Olive oil - 1/4 cup
  12. Water - to make the dough

Procedure:
Start with regular atta. 
Finely chop the mint into small bits and add to the atta. 
Add oil to the atta.
Add boiled and grated potatoes and rest of the atta.
Knead it into a soft dough by adding water a little at a time.
Take medium sized balls of the dough and roll out into a not too thick- not too thin paratha.
Place the paratha over the skillet. After a few seconds you will see the paratha change color and puff in different places. Then flip the paratha over. You should see some golden-brown spots on the topside. After a few seconds, spread 1 teaspoon of oil on the paratha. Again, flip the paratha and lightly press the puffed areas with a spatula.Flip again and press with the spatula making sure the paratha is golden-brown on both sides.

Serve it hot with little dab of of butter on it and a cup of curd on side :)
And enjoy.
If preparing for a day when you don't eat onion garlic, just skip the onion in the recipe and enjoy.
