Stuffed Tomato Curry
As a kid summer vaccations ment a long stay at my nani's place. It was fu with lots of cousions and no homework ;)
Unlike my mom my aunt's cooking skills were never her best skills but she made few things that I still remeber till day, like soya nuggets curry, santula and stuffed tomatoes.
Here is my version of the delicious curry.
Ingredients
- Tomatoes: 4 medium size (hard)
- Tomatoe paste of: 3 Medium size inside portion only(adjust as per the tartness of the tomatoes)
- Potato: 2 medium boiled and mashed
- Onion: 1 medium finely chopped.
- Ginger & garlic paste: 3 tsp
- Red chilli powder : 2 tsp
- Turmeric powder: 1 tsp
- Garam masala powder: 1 tsp
- Salt: to taste
- Coriander powder: 2 tsp
- Cashew nuts: 6
- Almonds: 4
- Watermelon seeds: 2 tsp
- Mava: 125 g
- Cream: 3 tbs
- Paneer: 100 g
- Orange red colour : 2 pinches
- Oil- 3-4 spoons
Procedure:
Wash tomatoes and cut with a sharp knife the top portion.Tack out or scoop the center portion.
Make a paste of tomatoes centers.
Make a paste of cashewnuts,almonds and watermelon seeds .
Heat oil in a pan, put half of the chopped onion and fry with a pinch of salt till it gets tansulent.
To the onion add turmeric powder,chilli powder,salt, garam masala, add boiled potatoes,also add grated or crumbled paneer.
Mix all well and keep aside.
Fill the tomatoes with this mixture.
In a shallow pan heat 2 tbsp of oil and and toss the stuffed tomatoes till its cooked from all the sides well.
Take another pan,add oil heat it and add rest of the onion and fry, till it turns brown.
Add ginger & Garlic paste, tuemeric powder, coriander powder, red chilli powder and add tomato paste and cook till the raw smell goes away and oil separtes. Add garam masala powder & salt.
Add orange food colour (its opyional) and mix well.
Add water in small amount and bring it to a simmer.
Add cashew paste and cook for a min or two.
Add cream and let it cook 3-4 min.
Add the tomatoes to the simmering garvy and let it cook for 2 more mins and then serve it hot with roti or naan and enjoy.
