Egg Bhurji Curry

As a kid this used to be one of my favorite curries that my mom would make for breakfast with roti or parathas. Its easy, quick and on top of all yummy!!!


Ingredients:

  1. Egg: 4 whole
  2. Onion: 1 medium finely chopped
  3. Green Chilli: 4 finely chopped (remove the seeds if you don't want it to be too spicy)
  4. Tomato: 1 medium finely chopped
  5. Green Peas: 1/2 cup
  6. Red Chilli Powder: 1 tsp
  7. Turmeric Powder: 1/2 tsp
  8. Salt: as per taste
  9. Mutton/chicken curry masala: 1 tsp
  10. Oil: 2 tsp

Procedure:
In a pan heat 1 tsp of oil and 1/2 of the chopped green chilli and onion with a pinch of salt.
Fry till the onion turns transparent.
In the mean while beat the eggs with 1/4 tsp of red chilli powder and 1/2 tsp salt.
Add the beaten eggs to the pan and make scrambled eggs.
Cook till the eggs are cooked through and the eggs turn slightly brown.
Remove from heat and keep aside.
Mix rest of the chopped green chilli , onion and chopped tomato together.
In a kadhai heat rest of the oil and add the onion, green chilli and tomato mix along with salt to taste and cover and cook till tomato turns mushy. 
Remove the lid and add red chilli powder, turmeric powder and Mutton/chicken curry masala and cook for another 4-5 mins.
Add the scrambled eggs and green peas and mix well.
Add 1/2 water, mix well, cover and cook for 2-4 mins.
Remove the lid and cook till the water dries up and you receive the desired consistency.
Remove from heat and serve it hot with pratha, poori or chapati and enjoy.

For variation you can add chopped carrot and bell peppers as per you wish.
