Chingudi Tarkari (Shrimp Curry)

Shrimp is one popular seafood choice that really packs a powerful protein punch and is great for dieters because it is so low in calories.  With each individual shrimp coming in at only 3-10 calories depending on the size, these are extremely easy to add into any diet.

It is my brothers favorite seafood. There are a variety of ways one can prepare shrimp and it mostly depends on the type of shrimp. The smaller ones are generally cooked with mixed vegetables. Large ones can be cooked with mustard paste or ginger garlic gravy. 

I prepared the following recipe at my in-laws during my stay in India this Christmas.

Ingredients:

  1. Shrimp (Large Ones) : 1 pound
  2. Potato: 1large cut into wedges
  3. Cauliflower: Few florets (optional)
  4. Onion: 1 medium finely chopped
  5. Ginger garlic Paste: 3 tsp
  6. Coriander Powder: 1 tsp
  7. Cumin Powder: 1 tsp
  8. Turmeric Powder: 1 tsp
  9. Red Chilli Powder: 1 tsp 
  10. Tomato: 1 large 
  11. Sugar: 1/2 tsp
  12. Salt: as per taste
  13. Oil : for cooking about 2-3 tsp
  14. Coriander Leaves: 1 tbsp for garnishing


Procedure:

Clean the shrimp add 1/2 tsp salt and 1/2 tsp turmeric powder to it.

In a pan heat 1 tsp of oil and fry the shrimp for couple of minutes. (Just till the skin turns pink on both side.) Remove from the heat and in the same pan fry the potato wedges and cauliflower florets till the potatoes are slightly golden.
In a heavy bottom pan heat 2 tsp oil. Add 1/2 tsp sugar to it and wait till it starts to turn brown but don't burn it. Add the chopped onion to the oil and add a pinch of salt to the onion. Cook till the onion is translucent. Add the red chill powder and fry for a minute or so just till the raw smell is gone. Add the ginger garlic paste, cumin powder, coriander powder, turmeric powder, chopped tomatoes and salt to taste. Cover and cook stirring in between till the tomatoes are mushy. Remove the lid and keep cooking the masala till the raw smell is gone and oil oozes out of it. At this point add the fried potatoes and cook it in the masala for another 2-3 minutes.
Add 2 cups of warm water to the masala and bring it to a boil.
As the water starts boiling add the cauliflower florets and shrimps and let it cook it with the cover till the potatoes are cooked through. Remove the lid and cook till the desired consistency is achieved.
Add the chopped coriander leaves to garnish and your yummy shrimp is ready.



Serve it hot with steamed rice and salad on side.
