Chicken Tikka

This was our first Christmas together. So I decided to throw a small party for few close friends. Tanmaya loves grilled food and tandoori, so I decided to try grilled Chicken Tikka. It is traditionally baked skewers with small pieces of chicken, usually boneless, in a clay based oven called tandoor , after marinating in spices and yogurt. But of course here we don't have the option of tandoor so we would cook it in convectional oven. Ingredients: Chicken thigh meat (boneless ) : 4 lbs Red Chili Powder : 2 tbsp Coriander Powder : 2 tbsp Cumin Powder : 2 tbsp Kasturi Methi : 2 tbsp Ginger Garlic Paste : 2 tbsp Cooking Oil : 2 tbsp Garam Masals Powder : 1 tbsp Salt : to taste Curd : 3/4 curd Food color Onion : 2 large Green Bell Pepper : 3 (one can always use red and yellow pepper to add more color) Process: Clean the chicken and cut it in to small cubes. Paneer Tikka Masala

Paneer is a fresh cheese common in South Asia Cuisine. Itsof Indian origin. It is an un-aged, acid set, non melting cheese made by curdling heated milk with lemon juice or any other food acid. Unlike most cheeses in the world, the making of paneer does not involve rennet as the coagulation agent, thus making it completely lacto-vegetarian and providing a source of protein for vegetarians. Panner Tikka is a very famous appetizer, where paneer along with veggies is placed on the skewer and roasted. Paneer tikka masal is a variation where we can convert this awesome appetizer to a main course. Potato is a very common vegetable and is used in almost in every cuisine. Potatoes yield abundantly with little effort, and adapt readily to diverse climates as long as the climate is cool and moist enough for the plants to gather sufficient water from the soil to form the starchy tubers. Some say you should not eat potatoes they are unhealthy, I say eat everything you love with moderation. I know diet conscious and people who love those six pack make sure they include potatoes in their diet plan. There are hundreds of ways these can be cooked. Lets talk about the most common dish of Potatoes that is cooked all over India but every body has a their own twist to it, "Dum aloo" :) What we need you ask? Road Trip to Yosemite National Park!

Mostly on Thanks Giving people stay at home cook the big dinner with Turkey and Pies but for us it was different. My husband had the whole week off instead of the regular 4 days, so we decided to get on a bus and take a guided tour to Yosemite. We had been these guided tours earlier and generally the guides are quite easy to understand but unfortunately this time we had time understanding the guide because of his heavy Chinese accent (no offense) but the beauty of nature so breathe taking that it was really not necessary to listen to any body. Yosemite's natural beauty can be found in things big and small, from towering granite cliffs and giant sequoias to diminutive wildflowers. It was snowing so it was really not possible to visit all the beautiful sites. But we did had a lot of fun in snow. Even though it was freezing cold, there were few creatures whom you could just not keep indoors. Like the beautiful pair of deers, and nature crazy photographers :) I underst
