Vegetable Paratha
Vegetable patatha is a popular breakfast item and is a great way to include vegetables in your meal. Also it is real yummy.
Ingredients:
For dough:
- Maida / All purpose flour – 1/2 cup
- Atta-1/2 cup
- Salt – to taste
- Hot water – As needed
- Oil – 1 tsp
For Filling/Stuffing:
- Carrot –1 medium cut into small cubes
- Green Peas: 1/2 cup
- Cauliflower: few florets finely grated
- Green Beans: finely chopped 1/2 cup
- Boiled n Mashed potato – 1 medium (optional)
- Onion – 1 small finely chopped.
- Tomato: 1 medium finely chopped
- Green chilly – 2 – 3 nos(finely chopped)
- Ginger Garlic Paste: 1 tsp
- Turmeric Powder: 1 tsp
- Garam Masala: 1tsp
- Red Chilli Powder: 1 tsp (adjust as per taste)
- Coriander leaves: finely chopped 1tsp
- Cumin Seeds: 1tsp
- Salt – as needed
- Water – little to sprinkle.
- Oil – 1 tbsp
Procedure:
Knead the dough using salt,hot water and a tsp of oil and set aside.
In a pressure cooker boil all the vegetables except onion, tomato and green chilli.
Heat a wok/kadai with oil and add the cumin seeds and let then crackle.
Add finely chopped onion and green chilly and cook tilll onions turn transparent.
Add the ginger garlic paste and fry till the raw smell is gone.
Add the finely chopped tomatoes and fry for a minute.
Add the boiled vegetables except the potato and green peas, followed by salt to taste, red chilli powder, turmeric powder, garam masala and coriander leaves.
Cook for 2-4 mins or till everything mixed well.
Turn off the heat and let the masala mix cool down a bit.
In the mean while in a bowl mash up the boiled potatoes and add the green peas and masala mix and mix well.
Check for the salt and spices.
Stuffing is ready.
For paratha:
Divide the dough and potato mixture into 6 equal parts. The stuffing balls should be about 1 1/2 times larger than the dough balls.
Roll it into a thin chapatti.
Take 2 –3 tsp of stuffing and keep it the center.
Now close all the sides of chapatti to make it a square or a round. It really depends on your preference.
Let them settle for 3 to 4 minutes before rolling them.
Lightly press the ball on the sealed side and keep it on the topside when rolling. Roll the ball light handed in to a rectangle or a 6-inch circles. Whenever the dough sticks to the rolling pin or rolling surface, lightly sprinkle dry whole-wheat flour on both sides of the semi-rolled paratha.
Heat a tawa and put the paratha over it.
Sprinkle some oil and cook both sides till golden brown.
Mixed vegetable paratha is ready to serve with raita or pickle of your choice.
You can always change the type of vegetables you want to use.
If you prefer you can skip the mashed potatoes and use just the vegetable masala as the stuffing for a healthier version.
You can also skip the maida and use just the atta.
