Aloo Jhatpat

I just call it aloo jhatpat because its quick and easy. Also I don't know what mom called it. It used to be one of my favorite items for lunch. Mom would pack up this with paratha  in a tiffin for lunch in school. Some days I really miss those great flavors. Today was such a day, when Tanmaya decided not to come for lunch and I didn't want to prepare some thing elaborate. So decided to make this.

Ingredients:
  1. Potato: 1 medium cut into fries
  2. Onion: 1 small thinly sliced (optional)
  3. Green Chili: 1-2 chopped
  4. Tomato: 1 small chopped
  5. Turmeric Powder: 1 tbsp
  6. Cumin: 1/2 tbsp
  7. Salt to taste
  8. Oil: 1 tbsp
  9. Water: 1/2 cup
  10. Roasted cumin & red chili powder : 1 tbsp 
  11. Coriander leaves : for garnish


Procedure.

Heat oil in a pan add cumin seeds.
Once the seeds stop cracking add the onion and potato together.
Add salt and turmeric powder.
Stir and cook for 1-2 mins.
Add tomatoes and 1/2 cup water. Cover and cook till the potatoes are done.
Remove the lead and the roasted cumin and red chili powder mix well and cook till all the water dries up.
Garnish with coriander leaves and serve wit hot chapati, paratha or poori.




It would work great for morning breakfast or quick brunch.
