Egg Paratha

Egg Paratha is a famous street food in Northen India and to be even more specific Delhi & Noida. I first tasted it during late night dine outs with my office colleagues. First I was superised, how did the guy managed to stuff raw egg onto a paratha, then I went and stood next to him to see the whole thing live.
Since then I have been preparing this recipe and its real quick and yummy.


Ingredients:

  1. Wheat Flour: 2 cup
  2. Warm Water: 1/2 cup
  3. Salt: 1/2 tsp
  4. oil: 4tsp
  5. Egg: 1 for each paratha
  6. Onion: 1 medium finely chopped
  7. Green Chili: 2-4 finely choped
  8. Tomato: 1 small finely chopped
  9. Cilantro: finely chopped as required
  10. Salt: as per taste

Procedure:
To prepare the dough mix wheat flour with 1/2 tsp salt, 1/2 oil and using warm water knead it into a soft dough.
Beat the eggs along with chopped onion, green chili, tomato, cilantro and salt.
Take a medium size ball of dough and roll into a thick circle. Brush little oil and fold into half. brush some more oil and fold it into a quarter.







Roll it further into a triangle.
heat a Tava and place the paratha on it.




Flip the partha after few minutes, when  tiny bubbles rise on the surface. Wait for 20-30 secs until it starts to puff up. With a small knife open the top layer of the triangle to form a pocket.
Pour in 1 egg worth of mixture into the pocket  and close it.
Reduce the heat and cook for 10-20 seconds and gently flip over. Add few drops of oil and cook for few more seconds and flip again and add few more drops of oil. Cook pressing slightly till the `egg is cooked through. 
Serve hot with some curd or pickle on the side.




This serves as a great breakfast as well as snack.
